        MANIAC CHILI        

 

Ingredient List........(Stuff You Need)............

 

  • 4-5 Lbs. Mixed Pork & Beef (Stew Cut)

  • 1    15 oz. Can Tomato Sauce    

  • 2    12 oz. Corona Beers

  • 2    Small Cans Diced Green Chili's

  • 1    Red Onion

  •       2 oz. Tequila

  •       Red & Green Tabasco Sauce

  •       Juice of 1/2 Fresh Lime

  • 2    Tbs. Ground Cumin & Cayenne

  • 1    tsp. each White & Black Pepper

  •       4 oz. Mixed Chili Powders

  • 2    Tbs. Fresh Chopped Garlic

  •       6 oz. ea. Jalapeno Jack & Sharp Cheddar Cheese

  •       Sour Cream

  •       Chili Oil

  •       Mesa

Eat Lots of antacids & prepare last will & testament

 

  • Brown meat and chopped red onion in chili oil, add garlic drain fat.

  • Add all dry ingredients.

  • Transfer to slow cooker/crock pot

  • Add tomato sauce & beer

  • Simmer on high for 30 minutes

  • Add chili's & lime juice

  • Add Tabasco sauce (Add as you dare!!!)

  • Simmer 1 hour

  • Add Tequila 

  • Simmer 1 hour (this ain't the canned stuff!!!!)

  • Chili is ready when the meat falls apart. Add additional beer or water as needed. If too thin, thicken with mesa or corn starch mixed with water to make 2tlbs paste.....stir until thickened.

  • If you're weird, add beans last 45 minutes.

  • Serve with chopped onion, sour cream, cheeses, Rolaids.....................

 

  • AND DON'T FORGET THE MARGARITA'S AND CORONA'S!
